Sweet Potato Pie
Sweet Potato Pie — “Baked to Perfection”
A silky, spiced custard-style pie with a buttery crust and natural sweetness from roasted sweet potatoes.
The filling is smooth, fragrant, and comforting. This is perfect for Thanksgiving or cozy autumn days.
Ingredients
For the Pie Crust
(You can use store-bought but homemade is always the best)
- 1 ¼ cups all-purpose flour or spelt flour for a rustic touch
- ½ teaspoon salt
- ½ cup (1 stick) cold unsalted butter, cubed
- 2–4 tablespoons ice water
For the Filling
- 2 medium sweet potatoes (about 450–500 g), roasted, peeled, and mashed
- ½ cup unsalted butter, softened
- ¾ cup SheaDare maple sugar
- ½ cup evaporated milk or coconut milk or almond milk (or heavy cream for richness)
- 2 large eggs
- 2 tablespoons SheaDare Baobab Powder
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon nutmeg
- 1 teaspoon SheaDare Ginger Powder
- Pinch of salt
Preparation Steps
1️⃣ Roast the Sweet Potatoes
- Wash, prick, and bake the sweet potatoes (200°C / 400°F for 45–50 min) until tender.
- Let them cool, peel off the skin, and mash until smooth and creamy (no lumps).
2️⃣ Make the Filling
- In a large bowl, beat the mashed sweet potatoes with butter until fluffy and creamy.
- Add maple sugar, milk, eggs, vanilla, and spices.
- Mix in baobab and ginger powder until evenly combined — the baobab adds a citrusy brightness, balancing the pie’s sweetness.
- Mix until silky smooth — the texture should resemble thick pancake batter.
3️⃣ Prepare the Crust
- Combine flour and salt in a bowl.
- Cut in butter until mixture resembles coarse crumbs.
- Add ice water a tablespoon at a time until dough holds together.
- Roll out and press into a 9-inch pie dish.
4️⃣ Assemble & Bake
- Pour the filling into the crust.
- Smooth the top with a spatula.
- Bake at 175°C / 350°F for 50–60 minutes until set (a knife inserted near the center comes out clean).
- Cool completely before slicing.
Decorative Touch
- Roll extra pie dough and cut out leaf shapes or a turkey motif using cookie cutters.
- Arrange on top of the filling before baking.
- Brush with egg wash (1 egg + 1 tbsp milk) for a golden finish.
Serving & Storage Suggestions
- Serve chilled or at room temperature.
- Add a dollop of whipped cream or drizzle of honey or vanilla ice cream.
- Sprinkle lightly with cinnamon sugar or maple sugar or extra baobab powder for presentation.
- Keeps it 3-4 days in the fridge.
